I keep a lot of long shelf life healthy foods in my pantry so that I don’t eat junk food on the days I’m unable to cook. Lots of cans of beans, corn, oats, soy cream, soup stock powder without salt, meal shakes, etc. This way, I can very easily have a healthy meal any time of the day. In the days I’m unable to move out of bed, meal shakes (there are very healthy variants) are my last resort 😉
Also i use the oven alot to make 'oven cakes' [pancakes on a cookie tray], cupcake eggs [eggs in a cupcake pan] or hamburgers on a cookie sheet. The oven or air fryer are my best friends.
Can of soup and instant mashed potatoes, or air fry frozen food [pizza rolls, tator tots or fries, or fish] or lunch meat sandwich. Not the healthiest but mentally it gives me the break. I cook for 5 people atleast twice a day so days off from Cooking are definitely needed!
“Baleadas” or rather my version. Rinsed can of black beans, tortilla with cheese on stove, smash the black beans, add avocado, yogurt or salsa/ hot sauce)
Tyson diced frozen chicken-cooked according to instructions. Then some shredded cheese and ranch. :) easy peasy
Toast with a slice of cheese and a pickle. It gives me something with texture and strong tastes, so I am VERY aware that I’m eating.
Anything frozen I can put in the air fryer! Or pre-sliced cheese on bread tosted in the air fryer with a side of pickles. 1 minute to assemble, 5 to cook, and better than not eating anything at all with minimal cleanup after :)
