Similar idea: I buy a big bag of Bob’s steel cut oats. I’ll make a batch in the Instapot, then portion it out for each workday. In the morning, I put a little bit of skim milk in it and microwave it for 30 to 45 seconds on high. It’s perfect for me. I stay full until lunchtime.
Depending on how much time you have in the morning to prepare and eat something: I figured out how to make scrambled eggs in the microwave. They turn out pretty decent. I’m all about the protein, so I put three eggs in a ceramic cereal bowl and beat them then add a tablespoon of ice cold water , 28 grams of shredded cheese. I heat it for 55 seconds on high in the microwave, then stir it, then microwave it again on high for 48 to 50 seconds. I tend to like my scrambled eggs on the soft side so when the time is done, they do tend to be a little runny, but when I stir them together and let it sit for a minute or so, it’s perfect for me. That grosses out my husband out, so he does his for a minute, stirs, then another 50 seconds. I can prepare and eat this in about 10 minutes. The only downside is that it’s a mess to clean up the bowl afterwards. I put water in it and let it soak all day, then clean it up when I get home from work.
Happy mornings to you!
