Making meals

I love to cook, but I have a really hard time making food for myself and eating well. I recently started meal prepping “complete” dishes, meaning single dishes that can act as the main part of my meal that cover all the necessary protein, carbs, and vegetables etc. i need. My favourite things like this to make right now are quinoa salad (i like the Jennifer Aniston recipe that went viral a while ago), cold pesto pasta salad and cold peanut noodle salad. All of these recipes are something I can make ahead and keep in the fridge for days, i don’t need to worry about reheating them, and they are balanced meals all by themselves. I make the recipe and put it straight in containers in the fridge so I can take it and throw it in my bag with an ice pack for work if I need to. It has really helped me to focus on cooking meals like this!

I’m not sure if this is in the same area as you but I have a hard time with eating.. like having an appetite or the motivation to eat.. recently I’ve started trying to cook things I see on social media or things I think are “aesthetic” and it’s been making me more motivated to cook and eat

I’m going to start meal prepping some of my salads and cold dishes like this. Good idea to eat and stay healthy plus it beats that adhd feeling of “two minutes is too long to wait” 😭
